Salted Fudge Brownies
Prep time: under 10 minutes
Cook time: 20-25 minutes
Serving size: 9 small brownies
Ingredients
1/2 cup melted coconut oil
1/2 cup unsweetened cocoa powder
2 oz unsweetened chocolate bar (I use Lily's Dark Chocolate)
3/4 cup monk fruit sweetener (any Xylitol or sugar substitute will work)
2 large eggs, room temperature
1 tsp vanilla
1/4 cup coconut flour
1 tsp (separated) pink Himalayan salt
1 tsp instant expresso powder or instant coffee
Directions
-Pre-heat oven to 350 and line an 8x8 baking pan with parchment paper
-In a medium saucepan, combine coconut oil, cocoa powder and unsweetened chocolate
-Heat on medium, whisking until mixture is smooth and has no lumps
-Remove from heat and stir in monk fruit sweetener
-Add eggs and vanilla and stir well
-Add coconut flour, .5 tsp of salt and expresso powder, and mix until fully combined
-Pour batter evenly into the pan
-Bake 20-25 minutes
