Italian Cauliflower Salad
Ingredients
1 pound cauliflower florets, stems trimmed
8 oz mozzarella balls, cut in half
1 cup grape tomatoes, cut in half
1 cup spinach
1 cup olives
4 oz salami
4 oz pepperoni
¼ cup diced shallot
¼ cup pepperoncini (I add about 1 tbsp of the juice from the jar too!)
2 tbsp minced garlic
1 can chickpeas, drained and rinsed
Salt and Pepper to taste
*I added a small grilled chicken breast to mine
¼ cup vinaigrette dressing (you could use Italian dressing)
Directions
Toss everything into a bowl and mix well! So easy!
Hints
Keeps well for 4-5 days in air-tight containers. I like adding a grilled chicken breast or a piece of fish. Perfect for lunches!
